Bánh mì in a steamy oven

100% 7/1 McDougalls '00'/Doves Farm rice flour
75% Evian mineral water
4% Fresh yeast
4% Cornish Sea Salt Co.
3% Tate and Lyle caster sugar

I placed a bowl of water in the oven this time resulting in a chewy crust. Not what I wanted but it does make excellent toast. I probably over-proved them a bit too whilst I had a disco nap.

Also borderline over-seasoned once you have a nice bit of ham on there.
