Thin crust experiment

Used a makeshift Dutch Oven for the first 10 minutes. Also had a cast iron skillet with water in the bottom of the oven. Crust was very thin but not crisp.

The quest continues.

24Hour autolyse rice and wholemeal with all the water
Combine remaining flour and salt
1Hour lazy baker knead
1Hour prove
Dust with white flour and slash
10Minutes in Dutch Oven at 250°C
6Minutes with the lid off
Probe was measuring 79°C as it came out but I went along with it anyway
